Founded by Larry Rosenbaum, of Albany, New York, and Sebastian Mühlhuber of Rott-am-Inn, Germany, Saratoga Cheese Corporation (SCC) is based in Albany, New York. While it is a start-up company, it has developed a very well-researched business plan and has assembled an international team of twenty experts who are working on implementing the plan. It is planning the construction of a cheese manufacturing plant in Cayuga County in the Aurelius Industrial Park, located west of the City of Auburn boundary. Cayuga County is in the Finger Lakes region of central New York State. Construction is planned to begin in 2012 and continue for about one year.
Because it will employ an advanced-technology German manufacturing system, Saratoga Cheese Corporation will produce the highest quality cheeses, yet at moderate prices. This manufacturing technology and other energy conservation measures of the new plant will also allow SCC to have one of the lowest carbon footprints (environmental impacts) in the cheese industry.
Another unique aspect of Saratoga Cheese is that, unlike any other cheese plant in the world, it will manufacture cheese that will simultaneously meet both the highest Kosher, called Cholov Yisroel, and Halal standards.
Kosher is a set of Biblical rules that defines the way foods should be grown, processed, and prepared that many segments of the Jewish community follow.
Halal means "Islamically acceptable". It refers to a set of Islamic religious rules and guidelines which are followed by the majority of Muslims today. These rules and guidelines define the way foods should be grown, processed, and prepared.
Kosher and Halal standards are similar in many ways, yet are rarely combined. By following these quality standards, our cheeses will appeal to all ethnic and religious groups that appreciate great cheese products at competitive prices.
